Marinated Pork Loin with Mushrooms

Even though it took me an hour to prepare and cook this marinated pork loin with mushrooms, I have to call this lazy food. Why? Because I just had to toss everything into the pan and walk away. 40 minutes and it’s done. Although, I don’t suggest walking away for a long time when you’re cooking.

The good thing about this dish is it doesn’t have bones. All you have to do is enjoy it. I have added some instructions about this dish below.

Make sure your knife is sharp enough to cut thin slices. Otherwise, you will have a hard time cutting this big, thick pork into thin slices.

The cut doesn’t need to be uniform in size as long as it’s thin so they cook all together at the same time. If you can find meat at the supermarket that is already thinly cut, you can use that too.

Put meat in first so they go to the bottom and add all the marinade ingredients on the top. Combine and mix them thoroughly with your hands for equal distribution. Cover the bowl with a lid or plastic wrap and then marinate in the refrigerator for an hour.

After the butter has melted, carefully lay the marinade mixture. Arrange the meat flat so they cook evenly. Then, cover and cook for 30 minutes without opening the cover.

After 30 minutes, you turn the meat over and taste at least the sauce. Add more spices you need to taste. If the taste already suits your liking, proceed by adding the mushrooms on top. Arrange them flat. Cover again and cook for another 5 minutes.

If for some reason, you don’t like mushrooms or it’s not available in your kitchen, feel free to substitute it with something else. Broccoli, eggplant, spinach, or any of your favorite vegetables. I have tried this with eggplant instead of mushrooms and I liked it.

Here is the cooked dish. The sauce may not be visible in the photo, but there is enough in this pan. But, if you want more sauce, just add a little bit of soy sauce and water and add salt, pepper, or lime for a balanced flavor.

I like pairing this dish with rice. You can try serving this with your friends or family. They will like it!

Ingredients
  • 2 lbs pork loin, thinly cut
  • 1/4 cup soy sauce
  • 1 large white onion, sliced
  • 1 tsp garlic, minced
  • 1/4 cup brown sugar
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 3 pcs bay leaves
  • 1 small red bell pepper, thinly sliced
  • 1 tsp lime juice
  • 3 tbsp unsalted butter
Instructions
Marinating Instructions:
  1. In a large mixing bowl, combine and mix thoroughly all the ingredients except the butter. Cover with lid or plastic wrap. Marinate in the refrigerator for an hour.

Cooking Instructions:
  1. In a large skillet, melt the butter over medium-high heat. 

  2. Carefully toss the marinated mix into the skillet and arrange all the meat laying flat. Cover and cook for 30 minutes.

  3. Remove cover. Flip the meat over and taste. Add more condiments if necessary or according to your liking. If everything is already good, add the mushrooms laying flat over the top and cover. Cook for an additional 5 minutes or until mushrooms are cooked.

  4. Serve with your favorite vegetables or over white rice.
