Ground Pork Menudo

This ground pork menudo recipe is called menudong giniling or pork giniling in Tagalog. There are a lot of variations of this recipe. Some quail or chicken eggs in this recipe, but I prefer mine without it. I think I have too much protein on this menu already. Others have also added peas, which I do sometimes, but most of the time, I don’t.

It’s an easy recipe. The preparation is quick unless you grind your own pork. If you want the soup a little thinner, you can add a little bit of pork broth. It’s usually what I do sometimes, especially if I want to eat it with rice. If you don’t like rice, add more potatoes if you wish to.

This menu is so good, I could eat this twice a week.

Ingredients
  • 1 1/2 lb ground pork
  • 1 large potato, cubed
  • 1 medium carrot, cubed
  • 1 medium green bell pepper, diced
  • 1 large onion, chopped
  • 5 cloves garlic, chopped
  • 1 can tomato puree or sauce
  • 2 tbsp tomato paste
  • 1-2 tbsp raisins
  • 2 tbsp soy sauce
  • vegetable oil
  • salt, to taste
  • ground black pepper, to taste
Instructions
  1. Preheat pan over medium-high heat. Then, add vegetable oil.

  2. When the vegetable oil is already hot, add the onions and garlic. Then, saute for 2 minutes.

  3. Add the ground pork and brown.

  4. Add the tomato puree/sauce, tomato paste, soy sauce, salt, and ground black pepper. Mix well. Cover and cook for 5 minutes.

  5. Remove the cover and toss in potatoes and carrots. Mix well and cover. Cook for 5 minutes.

  6. Remove the cover. Add the green bell peppers and raisins. Mix again. Cover and simmer for 15 minutes or until the vegetables are tender.

  7. Serve hot or warm. Best if partnered with white rice.
