Ground Pork Menudo

Pork Menudo or Pork Giniling in Filipino is a delicious lunch or dinner idea. Serve it with rice and enjoy.

Ingredients

  • 1 1/2 lb ground pork
  • 1 large potato, cubed
  • 1 medium carrot, cubed
  • 1 medium green bell pepper, diced
  • 1 large onion, chopped
  • 5 cloves garlic, chopped
  • 1 can tomato puree or sauce
  • 2 tbsp tomato paste
  • 1-2 tbsp raisins
  • 2 tbsp soy sauce
  • vegetable oil
  • salt, to taste
  • ground black pepper, to taste

Instructions

  • Preheat pan over medium-high heat. Then, add vegetable oil.
  • When the vegetable oil is already hot, add the onions and garlic. Then, saute for 2 minutes.
  • Add the ground pork and brown.
  • Add the tomato puree/sauce, tomato paste, soy sauce, salt, and ground black pepper. Mix well. Cover and cook for 5 minutes.
  • Remove the cover and toss in potatoes and carrots. Mix well and cover. Cook for 5 minutes.
  • Remove the cover. Add the green bell peppers and raisins. Mix again. Cover and simmer for 15 minutes or until the vegetables are tender.
  • Serve hot or warm. Best if partnered with white rice.
