My version of the Pork Humba Buto-buto recipe is quick, easy, and budget-friendly. Using only simple ingredients, I made a mouth-watering humba that we Filipinos love. Aside from being a perfect lunch or dinner dish, we can also make it for a fiesta, Christmas, cookout, or party at work. Just make sure to bring rice because rice is a perfect pair for this dish. I brought this dish one time at work during our pot lock and the ones who ate it loved it.
While this may not be the traditional method of making this dish, it certainly tastes rich and savory like the classic pork humba. If some ingredients are unavailable, feel free to use suitable alternatives based on your preferences. Feel free to experiment with new twists, while keeping the heart of this cherished recipe intact!
Suggested Ingredient Substitutes
- Pork chunks – pork ribs or pork belly. You might have to reduce the cooking time if you use pork belly.
- Vegetable oil – olive oil or unsalted butter
- Vinegar – rice vinegar, white or red wine
- Sprite – pineapple juice
- Black beans – chickpeas
Some foods taste even better the next day – this pork humba buto-buto is one of them! Dishes with vinegar and soy sauce deepen in flavor when reheated and perfect lunch to bring to work the next day. When I have leftover food cooked with soy sauce or vinegar, it usually lasts up to 5 days in the refrigerator. Well, at least 5 days for me because I ate them in that time frame.

Simple Filipino recipe of pork humba bone-in.
- 2 lbs pork chunks bone-in
- 3 tbsp vegetable oil
- 1 large onion, sliced
- 1 tsp garlic, minced
- 1/2 cup soy sauce
- 3 tbsp vinegar
- 3 tbsp brown sugar
- 1 tsp whole black peppercorn
- 3 pcs bay leaves
- 1 cup Sprite
- 1/3 cup black beans

Preheat the pan over medium-high heat.

Sear the pork chunks on each side.

Then remove from the pan and set aside.

In the same pan, add the vegetable oil.

Saute the onion for 3 minutes.

Then, add the garlic and saute for 2 minutes.

Return the meat to the pan. Continue mixing or flipping over for about 10 minutes.

Then, add the soy sauce, vinegar, brown sugar, black peppercorn, bay leaves, Sprite, and black beans. Mix thoroughly and cover.

Cook on medium heat (turning over once in a while) for 40 minutes to an hour, or until the meat is completely cooked.

Remove from heat when done. Serve over warm rice.
