Pork Humba Buto-buto Recipe (Pork Braised Bone-in)

Simple Filipino recipe of pork humba bone-in.

Ingredients

  • 2 lbs pork chunks bone-in
  • 3 tbsp vegetable oil
  • 1 large onion, sliced
  • 1 tsp garlic, minced
  • 1/2 cup soy sauce
  • 3 tbsp vinegar
  • 3 tbsp brown sugar
  • 1 tsp whole black peppercorn
  • 3 pcs bay leaves
  • 1 cup Sprite
  • 1/3 cup black beans

Instructions

  • Preheat the pan over medium-high heat.
  • Sear the pork chunks on each side.
  • Then remove from the pan and set aside.
  • In the same pan, add the vegetable oil.
  • Saute the onion for 3 minutes.
  • Then, add the garlic and saute for 2 minutes.
  • Return the meat to the pan. Continue mixing or flipping over for about 10 minutes.
  • Then, add the soy sauce, vinegar, brown sugar, black peppercorn, bay leaves, Sprite, and black beans. Mix thoroughly and cover.
  • Cook on medium heat (turning over once in a while) for 40 minutes to an hour, or until the meat is completely cooked.
  • Remove from heat when done. Serve over warm rice.
