Want to make the ground beef something a little different? I seriously made this up because I want to try something new. This is the good thing about cooking, we can always be creative with food. We can mix and match ingredients as long as they complement our taste. As for this dish, you can always add or omit something you don’t like.
This dish is fast and most of all ideal for low-budgeter. It can serve up to 4 people, especially if you make rice as an accompaniment to it.
- 1 lb ground beef
- 1 small onion, chopped
- 1/2 tsp garlic, minced
- 2 pcs potatoes, cubed/chopped
- 1 cup carrots, sliced
- 1/4 cup peas
- 1 can diced tomatoes with jalapenos
- 1 cup beef stock
- salt, to taste
- ground black pepper, to taste

Preheat pan over medium-high heat.

Brown ground beef.

Remove beef from heat and set aside.

Then, use the fat in the pan to saute the remaining ingredients.

Add the onions. Saute until translucent.

Add minced garlic and saute for a minute.

Add all the potatoes and stir until half-cooked.

Add the carrots and peas. Stir for at least 3-5 minutes.

Add the diced tomatoes. Mix well.

Then, add the beef stock. Mix and cover. Bring to a boil.

Then, remove the cover and mix in the browned ground beef. Mix well.

Add salt and ground black pepper. Cover.

Simmer for 30 minutes or until the vegetables are cooked.

Uncover. Remove from heat. Serve warm.
