One Pan Ground Beef and Potatoes in Tomato Sauce

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1/2 tsp garlic, minced
  • 2 pcs potatoes, cubed/chopped
  • 1 cup carrots, sliced
  • 1/4 cup peas
  • 1 can diced tomatoes with jalapenos
  • 1 cup beef stock
  • salt, to taste
  • ground black pepper, to taste

Instructions

  • Preheat pan over medium-high heat.
  • Brown ground beef.
  • Remove beef from heat and set aside.
  • Then, use the fat in the pan to saute the remaining ingredients.
  • Add the onions. Saute until translucent.
  • Add minced garlic and saute for a minute.
  • Add all the potatoes and stir until half-cooked.
  • Add the carrots and peas. Stir for at least 3-5 minutes.
  • Add the diced tomatoes. Mix well.
  • Then, add the beef stock. Mix and cover. Bring to a boil.
  • Then, remove the cover and mix in the browned ground beef. Mix well.
  • Add salt and ground black pepper. Cover.
  • Simmer for 30 minutes or until the vegetables are cooked.
  • Uncover. Remove from heat. Serve warm.
