Cheesy Macaroni Shells Recipe
Not everyone has time to cook a full meal at the end of the day. Most households have 2 wage earners to make ends meet or just to have a better lifestyle and if you have kids, it’s hard to have a meal ready at dinner time. This quick favorite is perfect for those weekday evenings with the family. Made from scratch but quick and delicious.
Also great as a side dish with the holiday meals.
Feel free to use another kind of pasta.
Serves 2 adults or 3 children.
- 12 oz macaroni mini shells or your favorite pasta
- 6 cups water
- 4 oz sharp cheddar cheese
- 4 oz Colby Jack
- 1 cup milk
- 2 tbsp butter, unsalted
- salt & pepper to taste
In a medium pot, boil water. Add butter until melted. Add pasta, cook until done.
Drain pasta in a colander. Set aside.
In a second pot, larger than the one used for the pasta, heat milk to warm on medium heat. Add cooked pasta, then 8 once cheeses (use any combo cheese you like), reduce heat to simmer while stirring continuously until cheese is melted.
Add salt and pepper to taste.
