Looking for an easy recipe for ground beef? Have you tried this? It’s fast and easy, budget-friendly, and tastes good. My husband calls this the ground beef extravaganza. I call it “ground beef mushroom corn recipe”. I made up this recipe a long time ago and I don’t know what to call it. But, credits to my husband for giving a name to this dish. He actually likes it. Though, you may call it whatever you wish. It is my go-to recipe for when my husband gets home from work late. It’s not spicy, yet it contains spices that make the mouth water with joy and satisfaction. It’s hardy and filling, perfect for the end of a hard day’s work.
Just a reminder… You can leave out the other ingredients if you wish to, but don’t omit the cornstarch in this recipe. It is an essential ingredient because it thickens the sauce. If you don’t include the cornstarch, it will just be watery. Use a deep pan or skillet for best results.
Eat this as is, serve over rice, potato or pair with any of your favorite vegetables. Enjoy!
- 1 can (15 oz) yellow corn
- 1 can (15 oz) mushrooms
- 1 medium green bell pepper, diced
- 3 cubes beef bouillon
- 2 tbsp cornstarch, melted
- 1 onion, chopped
- 3 cloves garlic, minced
- salt & pepper to taste
- green onions or scallions, chopped

Melt butter in a large pot over medium-high heat. Saute onions and garlic.

Brown ground beef. Don't drain. Toss in beef cubes when the beef is brown.

Cover and cook for 2-3 minutes or until beef cubes are melted.

Uncover. Mix well. Add green peppers, mushrooms, and corn. Mix and cover. for 7 minutes.

Remove cover. Season with salt and pepper, then taste.

Gradually pour in the cornstarch mixture while stirring slowly.

Cook and cover for 2 minutes. Uncover and garnish with green onions. Remove from heat.

Serve as is or eat with other vegetables.
