Walnut & Raisin Streusel Topping Coffee Cake

This recipe is for streusel coffee cake and is a perfect complement to any coffee flavor. Great for snacking, dessert, side or appetizer.

You can add or omit some ingredients to favor your own personal taste. Nobody can go wrong with this coffee cake.  Your friends will surely ask you for the recipe. Great for weekends, book clubs, and parties.

Ingredients
For Streusel Topping
  • 1 3/4 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1 1/4 tsp ground cinnamon
  • 1 1/2 sticks butter, unsalted
  • 1 cup chopped walnuts (optional)
  • 3/4 cup raisins (optional)
For Cake Mix
  • 1 stick butter, unsalted
  • 2 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 cup sour cream
For The Glaze
  • 1 cup confectioners sugar
  • 2 tbsp cold coffee or any other flavored extract
Instructions
  1. First, make the streusel topping. Mix the flour, brown sugar, cinnamon, and 1 tsp salt. Then cut in butter and mix just until small to medium clumps form. Mix in walnuts (optional) and refrigerate until needed.
  2. Preheat the oven to 350 degrees. Butter a 9" cake pan. Sift together flour, baking powder, baking soda, and 1/2 tsp salt.
  3. Start the cake batter; beat butter and sugar with a mixer 2 minutes on medium speed until fluffy. Add in eggs, one at a time, then vanilla. Add flour mixture in 3 batches. Alternating with the sour cream. Start with flour and end with flour. Add raisins (optional), Continue to beat in mixer until well combined.
  4. Spoon batter into cake pan and smoothen with a spatula. Remove streusel topping mix from the refrigerator and add to the top of batter, evenly.
  5. Bake until cake is golden brown, about 55 minutes. Check with a toothpick if the cake is done. Stick the toothpick into the center and it should come out clean.
  6. Put the pan on wire rack and let cool completely. Do not remove cake yet.
  7. After the cake is cool, remove the cake from the pan and prepare glaze.
  8. Mix confectioners sugar and coffee or any other flavored extract. Drizzle over cake and let rest for 5 minutes before serving.
