Simple, Moist Banana Bread Recipe

I love bananas. Therefore, I love banana bread! I eat a banana almost every day. They are abundant in Asia because they grow almost everywhere. Growing up in a tropical country, I was surrounded with a lot of exotic fruits. Although bananas are not exotic, you might find the trees exotic. If you lived in Florida, there’s a chance that you or your neighborhood have banana trees.

However, I did not try banana bread until in my thirties – when I got married. My husband made this bread and I almost ate the whole loaf because it was so good. Since then, I had to try it. I cook a lot, but I have never baked… and I was surprised my first try was a perfection.

Every time I make banana bread, it is always moist. There are three things that I am consistent about when making banana bread. One, I always use overripe bananas. Two, I always use room temperature (soft) butter. Three, I don’t over mix when combining the ingredients. And, if I want the top a little bit crunchy, I just add 10-20 minutes of baking time.

Here’s a very simple and easy banana bread recipe. You don’t need a mixer with this one. I only used a fork and spatulas for combining the ingredients.

This bread is so filling. You can eat it any time of the day. Enjoy!

Ingredients
  • 3 large ripe or overripe bananas
  • 2 eggs, cracked
  • 1 stick unsalted butter, room temperature or melted
  • 1 1/2 cup all-purpose flour
  • 3/4 cup sugar
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp salt
Instructions
  1. Preheat oven to 350°F (177°C)

  2. Grease bread loaf pan with butter or cooking oil spray.

  3. In a large mixing bowl, combine all dry ingredients: flour, sugar, baking soda, baking powder, and salt. Mix well. Set aside.

  4. Peel the bananas and put them in another large or medium mixing bowl. Mash. Add the butter and eggs. Mix well.

  5. Combine the wet ingredients into the bowl of dry ingredients. Mix gently.

  6. Pour the batter into the bread loaf pan. Bake 350°F for an hour. Insert a toothpick in the middle of the loaf. If the toothpick comes out clean, it is done. Add another 10-20 minutes if not done.

  7. Remove from the oven. Let it cool down for 30 minutes before removing it from the pan.
