Here is my version of mild spicy beef stew that is made with soft potatoes, tender beef, and sweet bell peppers. It has a bit of spice from paprika and crushed red pepper, but it’s not too hot. You can serve it with rice for lunch or dinner.
If you prefer a regular beef stew without any heat, you can skip the crushed red pepper. Leaving it out won’t affect the overall flavor much.

Ingredients for Mild Spicy Beef Stew
- 1 lb. beef stew meat
- 2 large potatoes, cubed
- 4 tbsp. unsalted butter
- 3 cups hot water
- 1/3 cup soy sauce
- 1 large red bell pepper, cubed
- 1 large yellow bell pepper, cubed
- 4 beef cubes
- 1 large onion, cubed
- 1 tbsp. minced garlic
- 1 tbsp. paprika
- 1/4 tsp. crushed red pepper
- A pinch of salt
- A pinch of ground black pepper
Step-by-Step Instructions
1. Prepare the Beef
In a non-stick pan or skillet, melt 2 tbsp of butter over medium-high heat. Brown the beef evenly, then transfer it to a bowl and set aside.
2. Saute the Seasoning Vegetables
In the same pan (don’t discard the sauce from the beef for more flavor), add the remaining 2 tbsp butter and, cubed bell peppers, onions, and minced garlic. Cover and cook for 10 minutes. Stir once at the 5-minute mark to prevent the seasoning vegetables from sticking.
3. Combine All Ingredients
Remove the cover and add the browned beef back into the pan. Then add the potatoes and the rest of the ingredients. Mix thoroughly to combine all the flavors.
4. Cook Until Tender
Let the stew cook for 10–20 minutes or until the beef and potatoes are tender. Stir occasionally to ensure nothing sticks to the bottom.
5. Final Touches
Taste and adjust seasoning if needed. Add a bit more salt or crushed red pepper if you prefer a stronger flavor.
6. Serve and Enjoy
Serve the beef stew hot over white rice because pairing it with rice is what makes it a perfect meal.
