Instant Noodles Vegetable Soup Recipe
One of my favorite go-to recipes is this Instant Noodles Vegetable Soup. There are some days when you just need something warm, comforting, and easy to make—especially when the cold weather sets in. Whenever the temperature drops, I always find myself craving a hot bowl of soup. It’s incredibly simple, takes less than 30 minutes to prepare, and uses basic, affordable ingredients you probably already have in your kitchen.
This vegetable noodle soup is a reminder that you don’t need to spend a lot or use fancy ingredients to make something delicious and satisfying. As Filipinos, we’ve always found joy in simplicity, and this soup captures that perfectly.

Living here in the U.S., tropical vegetables can be expensive and not always easy to find. Ingredients
- 1 package instant noodles (with included seasoning)
- 3–4 cups of water
- 1 Chinese eggplant, sliced
- 1 tomato, sliced
- 5–8 pieces of okras
Instructions
- In a medium-sized pot, bring the water to a boil.
- Add the sliced eggplant, tomato, and okra. Cover the pot and bring it back to a boil.
- Once boiling, remove the lid and add the instant noodles along with the included seasoning. Make sure the noodles are fully submerged so they cook evenly.
- Let the noodles cook for about 3 minutes. Stir to break apart the noodles.
- Transfer to a serving bowl and enjoy while hot.
Substitutions and Variations
The good thing about this soup is that it’s very flexible. You can make changes depending on what you have at home or what flavors you’re in the mood for:
Noodles: You can use any type of noodles you prefer – glass noodles, rice noodles, misua, or your favorite brand of instant noodles.
Water: For extra flavor, replace plain water with chicken, beef, or vegetable broth.
Vegetables: Feel free to add your favorite vegetables – cabbage, spinach, bok choy, or even frozen mixed vegetables. Just make sure to adjust the amount of liquid if you’re adding more ingredients, so the soup doesn’t dry out.
Tomato: You can swap out the tomato with onions or bell peppers, depending on what’s available.
Want to make it more flavorful? Go ahead and add some of your favorite ingredients – maybe a boiled egg, a few slices of tofu, or even leftover chicken or shrimp.
I’ve made this soup many times, and it’s never exactly the same twice. Sometimes I enjoy it as-is, and other times I pair it with a small serving of rice, just like how we often eat soup back home. It all depends on my mood.
