Gyudon or beef bowl, is a Japanese dish made with thinly sliced beef and onions cooked or simmered in a sweet and flavorful sauce made from a mix of, dashi, mirin, and sugar, served over steamed white rice with a soft-boiled egg topping.
Where to find Gyudon?
You can find it in Japanese fast-food chains like Matsuya, Sukiya, Yoshinoya, and restaurants. Gyudon was my favorite food from Yoshinoya when I was still living in the Philippines and I order it all the time!
You can also make it at home easily with simple ingredients. These ingredients are typically simmered together to create a sauce that soaks into the beef and onions and saturates them with flavor. The combination of these sauces is what makes Gyudon so delicious and comforting.
What kind of Gyudon sauces are they?
I’m sure all of you already know what soy sauce is. But for those who are not familiar with mirin and dashi stock, here’s a short information about these components:
- Mirin is a sweet rice wine with a mild tanginess and light alcohol content. It adds sweetness and shine to the sauce while balancing the saltiness of soy sauce. A good substitute for mirin is rice vinegar or a mix of sugar and sake.
- Dashi stock is a light, umami-rich broth made from kombu seaweed, katsuobushi bonito flakes, or shiitake mushrooms for a vegetarian option. It gives a mild umami flavor that makes Gyudon taste authentically Japanese. You may use the dashi packets if the stock or broth is unavailable.
Flavor enhancements
- Sake – adds a hint of fruity flavor and softens the beef.
- Shichimi togarashi – a Japanese chili spice blend condiment is often sprinkled on top for some heat.
- Picked red ginger – topper for a contrasting taste.
This super easy Gyudon recipe is delicious. but if some of the ingredients don’t suit your taste, you can leave it out or you can replace it with your preference. Here is a quick, easy and budget-friendly Gyudon recipe.
- 2 tbsp unsalted butter
- 1 medium onion, sliced
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1/2 cup dashi stock/broth
- 2 tbsp mirin
- 14 oz shaved beef, or thinly sliced beef
- 1 pc soft boiled egg, topping
- 1 tbsp scallions, optional
- 1 tbsp picked red ginger (optional)

Preheat the pan over medium-high heat.

Melt the butter.

Saute the onions for 3-5 minutes or until translucent white.

Add the remaining ingredients.

Mix all together, and cover.

Stir occasionally until the beef is completely cooked.

Serve over white rice and add the toppings.
