Ingredients
- 3-4 tbsp unsalted butter
- 1 pc. chopped onions, red or yellow
- 2 tbsp garlic, minced
- 1 pc. green bell pepper, chopped
- 3 pcs. tomatoes, chopped
- 2 lb. chicken tenders, chopped or sliced
- 2 cups chicken broth
- 1/2 tsp. ginger, chopped
- ground black pepper, to taste
- salt, to taste
Instructions
- Preheat the pan over medium-high heat.
- Melt the butter.
- Add onions. Saute for 5 minutes or until half soft.
- Then, add the garlic and saute for 3 minutes.
- Add the green bell pepper and tomatoes. Saute for 2-3 minutes.
- Add the chicken tenders. Stir until the chicken turns white.
- Then, add the chicken broth. Mix thoroughly.
- Add the ginger. Mix and cover.
- Cook for 20 minutes. Uncover and mix again. Then, taste. Add salt and ground black pepper if necessary.
- Serve warm and enjoy!
You can also add a bit of cooked rice if you want your soup to be more filling. It absorbs the flavorful broth, and provides extra energy, making your meal more satisfying and comforting.
