This thick and saucy Pork Chunks and Green Beans dish combines tender pork cubes, green vegetables, pork stock, and a rich tomato paste. Perfect served over white rice for lunch or dinner.
In a non-stick pan, melt the unsalted butter over medium-high heat.
Add the sliced onion, minced garlic, and orange bell pepper. Saute for about 5 minutes or until the vegetables begin to soften. Then, push them to the side of the pan.
Add the pork chunks to the cleared side of the pan. Brown them for about 5 minutes, then combine them with the sauteed vegetables.
Stir in the French-cut green beans, tomato paste, and pork stock. Season with salt and ground black pepper to taste. Mix everything until well combined.
Cover the pan and let it cook for 15 minutes, or until the pork is tender and fully cooked.
Serve warm over a bed of white rice for a filling meal.
