Ginisang Upo with Sardinas (Sauteed Opo Squash with Sardines)
A simple and flavorful dish made with tender opo squash and savory sardines in tomato sauce. Perfect served over warm white rice.

Ingredients

onion, chopped

garlic, minced

opo squash, peeled and chopped

soy sauce
salt, to taste
ground black pepper, to taste
splash of water
Instructions
In a non-stick pan, melt the butter over medium-high heat.
Add the chopped onion and sauté for about 3 minutes, until softened.
Stir in the minced garlic and cook for another minute, until fragrant.
Add the chopped opo squash and sauté for 5 minutes, stirring occasionally.
Pour in the soy sauce and add the sardines (including the tomato sauce). Stir gently to combine.
Season with salt and ground black pepper to taste.
Add a splash of water to prevent the sauce from drying out.
Cover the pan, reduce the heat to low, and simmer for 20 minutes or until the opo squash is tender.
Serve warm over steamed white rice.
