Ginisang Upo with Sardinas (Sauteed Opo Squash with Sardines)

A simple and flavorful dish made with tender opo squash and savory sardines in tomato sauce. Perfect served over warm white rice.

Ingredients

  • 2 tbsp unsalted butter
  • 1 small onion, chopped
  • 1 tsp garlic, minced
  • 1 small opo squash, peeled and chopped
  • 1 tbsp soy sauce
  • salt, to taste
  • ground black pepper, to taste
  • splash of water

Instructions

  • In a non-stick pan, melt the butter over medium-high heat.
  • Add the chopped onion and sauté for about 3 minutes, until softened.
  • Stir in the minced garlic and cook for another minute, until fragrant.
  • Add the chopped opo squash and sauté for 5 minutes, stirring occasionally.
  • Pour in the soy sauce and add the sardines (including the tomato sauce). Stir gently to combine.
  • Season with salt and ground black pepper to taste.
  • Add a splash of water to prevent the sauce from drying out.
  • Cover the pan, reduce the heat to low, and simmer for 20 minutes or until the opo squash is tender.
  • Serve warm over steamed white rice.
