Chicken Afritada Recipe

Afritada can be made with chicken, pork, beef, or seafood. It’s a blend of many flavors. It’s tasty, flavorful, and perfect viand for white rice. It has also a lot of variations. This chicken afritada recipe has basic ingredients because I always like to simplify my version.

This is a great dish to serve during family and friends gatherings or special celebrations.

Additional tips and instructions:

This dish normally uses tomato sauce, but sometimes I use banana sauce because of its sweet taste, but if you don’t like the sweet sauce, you can always use any tomato sauce and reduce the amount of sugar from the suggestions. You can buy the banana sauce at Asian stores and supermarkets that carry international goods.

I left out the bell peppers since I don’t use them with banana sauce because, to me, the bell peppers do not complement with banana sauce. I only include the bell peppers if I’m using tomato sauce. But, you can try including it with the banana sauce.

Mouth-watering Chicken Afritada Filipino-style recipe.

Ingredients
  • 3 lbs chicken (thighs, legs or wings)
  • 2 medium potatoes, cut into quarters
  • 1 large carrot, cut into quarters
  • 1 cup banana sauce or tomato sauce
  • 1 medium onion, sliced
  • 3 cloves garlic, crushed
  • 2 tbsp soy sauce
  • 1 tbsp sugar, (2 tbsp if using tomato sauce)
  • 1 cup water
  • 2 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
Instructions
  1. Preheat a large pan over medium-high heat. Melt the butter; saute onions and garlic for a minute.

  2. Arrange the chicken in the pan and lightly brown both sides. 

  3. Add soy sauce and cook for a minute on each side. 

  4. Pour in the water. Cover; cook for 20-30 minutes or until the chicken is tender.

  5. Remove the cover; add the banana sauce, sugar, salt, and black pepper. Give it a good stir to combine everything.

  6. Add potatoes and carrots. Cover; turn heat to medium; cook 10 minutes.

  7. Uncover, stir and taste. Add salt or black pepper if necessary.

  8. Serve over steamed white rice.
